| Soup last night, CHILI tonight!
I'm making my yummy chili tonight. I use a pound of extra lean ground beef, browned with chopped garlic and onions and drained. Add a big can of tomato sauce, a can of petite diced tomatos, a can of corn, a can of original Rotel, and a packet of McCormick's chili seasoning. Cook on low for a few hours, and voila! Yummy chili. You can add beans for extra protein, but I prefer my chili to be beanless.

It was very, very delish! Kinda spicy, but nice. Filling, too. Less than a cup, and I was stuffed.

Chili is a wonderful comfort food for me. I don't like it at restaurants, I don't like it from a can or a box..
But when I make it from scratch, and leave it on low on the stove all day.. mmmmmm.
I do love it, especially on the cold days.
I make it by browning meat with onions, then adding garlic, tomato paste, water, cloves, bay leaves, salt, pepper.. then cooking it for a while, then adding kidney beans and cooking a while longer (slow all day long).. take out the cloves and leaves.
I use to also like putting it on rice or macaroni noodles, but I enjoy it just as much without and no need to add all the extra calories.

Yummmmmmm, I absolutely love chili, I make it all the time.
These days I skip the rice (or for the kids I serve it on organic corn chips) and just have it as is, with a good dollop of thick natural yogurt and some chopped avocado and tomato.
I like mine FULL of beans though.
Its healthy, cheap, high in protein and fibre (if you have the beans) and also vegetable based with all the tomato. Perfect food really.

I mix a little cheese into mine. It tames the kick a little and adds some extra flavor.

I'll have to try that next time. I'm going to freeze some of the chili, so that I'll have it whenever I want it.

I used to make the clone Wendy's Chili recipe and really like that a great deal.
