I loved avocados mushed up with garlic powder, lemon juice & a little salt. I also loved refried beans with enchilada sauce & cheese. Just be careful with the cheese. If you are really tight it can get stuck pretty easy. Just take small bites of the cheese. Applesauce is wonderful too! Congrats & good luck!

I liked mashed cauliflower. Never would eat it before band. It is very much like mashed potatoes, but without all of the carbs!
Boil cut up cauliflower until it is soft.
Blend with butter, half and half (or sour cream), salt and pepper. You can put some cheese in it too!

  • Rosarita "Chile and Lime" refried beans with a bit of tobasco, red sauce, and sour cream.
  • Canned chicken breast w/ a bit of mayo, crumbled feta cheese, greek seasoning, and tomato juice.
  • Baked sweet potato with a bit of butter (I use the FF spray) and brown sugar (can substitute brown Sugar Twin).
  • Cauliflower boiled until it's mushy, mixed with parmesan, sour cream, garlic and onion powder, topped with a little cheddar and baked like a potato casserole.
  • Guacamole (pretty much what JessieBear described)
  • Eggs, egg casseroles
  • Pudding, applesauce, flavored applesauces (the Granny Smith one is yummy, and no sugar added)
