| Lemon Chicken soup
I had this at a Greek place just a side dish size but man it was good.
I made "My" what I have in the kitchen version tonight and man its good! My kids are tearing it up! Might have to put some aside if hubby dont get here soon to eat! lol
Okies so I took my cheapo chicken quaters boiled until off the bone, and de boned
I put the chicken back in the pot and added 8 more cups of water. salt, basil, lemon pepper and cavenders herb mix (what ever spice ya like I guess)
then I got out my lemon juice and well I just added until I liked the taste...It is a lemon chicken soup so the broth tastes like chicken broth with lemon! hehe
Once boiling I added Barley 6 servings worth. anyhoo you put pot to simmering and cook 1 hour.
Barley is like rice but better lol anyhoo it takes atleast 45 min to cook.
So basicly its like a chicken and rice soup but with Barley and the broth is lemon flavored.
