Wink Jack's zippy squash treat

1 butternut squash

peeled & remove seeds

1 carrot
1 leek
1 apple (yes APPLE)
1 celery stalk
1 small potato
10 oz tomato puree

coarse chop everything (or puree if you insist)

1t oregano
1/2 t rosemary
a lotta garlic cloves (fresh is better)

put in pot
medium heat for about 40 minutes

stir in tobasco to taste (YES TOBASCO) ;

add cumin or chili powder to taste also...

enjoy.....

my great grandmother use to make butternut squash stew around the holidays - and these ingredients ring a bell.

I LOVE roasted winter vegetables. Cut up parsnips, carrots, butternut squash, sweet potato and cauliflower. Toss with a touch of olive oil, garlic power, sea salt and pepper and roast alongside your chicken or whatever./
