Stuff the Manicotti not Yourself

8 oz. manicotti (whole wheat,if you can find it), uncooked

1- 15 oz. container part skim Ricotta cheese, whipped until smooth

1/2 c. Asiago cheese, grated

2 cloves garlic

2 large egg whites, beaten

1/4 c. sliced green onions

2 tsps. Italian seasoning

2 tsps. parsley flakes

1/2 tsp. salt

1/4 tsp. pepper

1- 26 oz jar spaghetti sauce

Prepare pasta according to package directions. Drain.
In med. bowl, blend Ricotta, Asiago, egg whites, Italian seasoning, garlic and onions. Stir in parsley, salt and pepper. Stuff pasta with cheese mixture. Arrange in 13 x 9 inch baking dish. Pour spaghetti sauce evenly over pasta. Bake in 350 degree oven for 35 minutes.
Serves 16 small weight loss surgery portions.
