Exclamation Solstice Pumpkin Treat!

does anyone think this sounds good?
we used to make it about this time of year....

Take a rather small pumpkin....about a cantelope size first to see if you like this...

cut a lid off the top so you can replace it as a seal later.....

hollow out the gizzard and seeds....set aside....

lightly scrape down to the pumpkin surface inside....

Altenate thin layers of such as: sliced apples (2 or 3 real tart varieties and 1 or 2 smoother types work very well), crushed walnuts, orange slices, a little honey, cinnamon, nutmeg, etc, sometimes a little squirt of lemon juice helps too.....a handful of dried cranberries, a few raisens....another few layers of various similar fruits of your choice...replace lid, wipe outside with EVOO....

Slow bake in oven....can remember the time here, but 'baked pumpkin' has Betty Crocker rules written all over it....

meanwhile, separate the seeds from the rest of the innards of the pumpkin...wash seeds, pat dry, lay out on cookie sheet....bake or roast in over to taste....salt lightly...allow to cool....

Now....who needs a bit o'this???

Yummmmmmmy!! And I have sweet potatoes baking in the oven...the smell wafting down the hall as I hunker down in the office with a hot cup of coffee...DH and daughter reading books at the kitchen table...pitter-patter of 2yo feet running around the house...and reading this far-away harvest recipe that sounds so delicious...it just adds to my ambiance here! Thanks Jack! Sounds heavenly!

Sounds wonderful Jack!
We had sweet potatoes tonight for dinner. Mashed some sweet pototoes with some cinnamon, nutmeg and a lil brown sugar. Then put back in a small baking pan and sprinkled marshmellows, coconut and nuts on top...yummmy. I just had a little bit, but boy was it good!

Sounds good. I'd probably leave the oranges out just because I can't imagine eating baked oranges. But the rest sounds fabby. I might have to try this if I can find any small pumpkins yet at Walmart. Yummy!
