The only thing better than bread or potatos is pasta, IMO, so I think I'll stick with my regular homemade lasagna recipe, instead of going the potato lasagna route.

Well, I think I'll try it, and I'll slice the potatoes thinner than it calls for, and add more meat, but it sounds too good to not try once.... And anything IN MODERATION is key! Although I normally try to do my protein first, then veggies, then carbs as per the bandster rules, but once in a while a casserole or skillet dish is ok, I think. Thanks for the recipe, Krystal!

I admit, I do plan to try this. I know fiance would love it.. meat and potato man. So I think when I'm able to have something like this, I'd likely make it and have plenty of leftovers! Just wouldn't eat half of it, like I would have a couple weeks ago ;)
