Mock Mashed Potatoes


If you miss potatoes, here's a great recipe. You can make this LOW CALORIE by cutting down on the butter and sour cream or leaving the sour cream out.

I LOVE THIS STUFF !!!

Preheat oven to 350

1 very large head of fresh cauliflower - boil or steamed well.
1/2 stick butter softened
1/2 cup sour cream
salt and pepper to taste

*OPTIONAL Topping:
1/2 cup shredded cheddar

Let cauliflower drain VERY well. Press out the water, blotting with paper towels.

Put cauliflower, butter, sour cream and salt in large bowl, use electric mixer and blend very well. Spray an 8" by 11" (approx.) size casserole baking dish, and spread mixture evenly in dish.

Bake at 350 for 30 minutes.

* Take out and sprinkle with cheese. Bake for 5-10 minutes more, or until cheese is melted and bubbly.

Enjoy the flavor, get your fiber and forget the carbs and calories :)

Note: its not as creamy as real potatoes but the flavor is great IMHO :D

Cauliflower makes great mock rice too. You just cook it and kind of crumble it.

Its a great way to get vegetables into the kids, they dont even realise.

I love this stuff and DH loves it too. We an eat an entire head between the two of us :D You really do save ATON of calories.

Thanks for the recipe! As soon as I get to solids I will try for sure (might even attempt a small sample during mushie stage if I blend after cooking)
