Mashed Cauliflower


3 cups cauliflower florets
2/3 cups skim milk
4 tablespoons fat free sour cream
Salt and pepper to taste
20 sprays of artificial refrigerated
butter spray
(i.e. I Can’t Believe It’s Not Butter)
  1. Steam cauliflower for 10-15 minutes until very soft.
  2. Puree cauliflower in a food processor until smooth.
  3. Add milk, sour cream, salt, and pepper to cauliflower and
    blend until smooth and well combined.
  4. Put mixture in microwave safe dish and heat for 2 minutes;
    spray with butter spray and serve.
Calories: 202.17
Protein: 15.51g Fat: 0.92
Carbohydrates: 35.52g Cholesterol: 13.27mg
Fiber: 7.5g Sodium: 224.93mg

I know some of you are thinking, yeah right but I was telling my husband how some of the banders on here have talked about having this in place of mashed potatoes. He decided to try it the other night with our roast instead of the mashed potatoes (No, I didn't eat any, still on liquids! ). Surprisingly enough, they all LOVED it! The 14-yo and 12-yo were almost licking their plates and they are pretty die-hard potato fans. So, although it sounds crazy, try it, you might like it!

Also, he didn't do anything as elaborate as Alex's recipe, he just cooked it to pieces, added 1 tbsp butter, and mashed the fool out of it. So, I'm guessing Alex's version would be over-the-top!
