Low Calorie/High Protein Mac-n-Cheese

Low Calorie/High Protein Macaroni and Cheese

2 cups uncooked macaroni
1 (12 oz.) container low-fat cottage cheese
1 (5 oz.) can evaporated skimmed milk

2 scoops unflavored Whey Protein
1/2 cup Cheddar cheese, shredded
1/2 tsp. salt
Freshly ground black pepper

Cook and drain macaroni according to package directions. In blender process cottage cheese, protein powder and milk until smooth. Place in small saucepan and, stirring constantly, heat over medium-low until smooth. Add Cheddar cheese, salt and pepper. Stir until cheese melts. Fold in macaroni. Serve immediately or place in covered casserole dish and bake 20 minutes at 350 degrees.
Makes 8 - 1/2 cup servings w/ approximately 20 grams of protein per serving.

Where does one find Whey Protein?? Like, is it something they have at Walmart, or do I have to go elsewhere? I am totally food naive, someone help me! :)

You can find it many places G N C Walmart etc. I like Unjury Off the internet, they have flavors that are great and also unflavored to mix into soups with flavored water, puddings Jello etc.Welcome to the UNJURY Homepage hope this helps. Peg

Oooh!!! Macaroni and cheese is my gateway food! If I eat it, I go off my diet in a big way. I'm going to try this...but with rice pasta, rice protein and soy cheese instead. Thanks for the inspiration!!
