So i made this for dinner for my dh and about 5 of my close friends the other night.. i was a little worried b/c even i hadn't ever tasted it... BUT... i have to tell you it was a HIT!! everybody loved it... my hubby said it was ok.. b/c he knew there was squash in it.. but that didn't stop him from getting seconds!! 
Thanks so much for this awesome recipe!

Hi Lucy! Glad it was a hit! I love this recipe but I recently stopped eating meat, so I need to make a vegetarian version. Thanks for the positive comments!

are you finding the no meat easy / hard - curious, DH wants to do a fast of meat...and not sure i can give up at least chicken.

Even though I am eating some meat now, I don't eat near as much as I used to. I think all the years of low carbing and eating so much meat just turned me off from it for a while.
Well, did you and DH do the meat fast?
