Low Fat Creamy Mashed Cauliflower


It is wonderful and great for the mushy stage . . . .
  • 1 head cauliflower
  • 2 ounces low-fat cream cheese
  • 1/4 teaspoon white pepper
  • 2 garlic cloves, minced
  • 2 tablespoons Parmesan cheese, grated
  • paprika
  1. Cut cauliflower into florets of even size
  2. Drop into boiling salted water and cook for about 15 minutes or until very soft when pierced with a fork
  3. Drain well
  4. Put cream cheese in food processor (or blender)
  5. Add cooked cauliflower and garlic and blend until creamy
  6. Add Parmesan cheese and salt and pepper to taste
  7. Pour into 1 quart greased casserole dish. Top with a light sprinkle of paprika and bake in 350 degrees oven for about 20 minutes or until bubbly and hot!
86 calories / 4.2g fat / 5.3 protein

This is a delicious dish. Mmmm. . . nice and creamy

WOW! THANKS! I am in the mushy stage and Mashed Cauliflower is one of my favorites. I plan on making this tomorrow.
